These matcha muffins are perfect for when you need a quick healthy breakfast or an afternoon snack to stop you reaching for the biscuit tin. They are super simple and easy to adapt to suit the taste of everyone in your family! These muffins can be made and kept in an airtight container for up to a week, if they last that long!
You will need
2 large ripe bananas
1tbsp baking powder Dr.Oetker
1tsp vanilla essence Taylor and Colledge
1tsp Terrific Tea matcha
1 cup of rolled oats
2 large eggs
1tbsp runny honey Hilltop Honey
Fresh fruit or chocolate chips (optional)
Preheat your fan oven to 180° and grease a muffin tray with a small amount of butter using grease proof paper or a pastry brush.
Next use a fork to mash the bananas into a smooth pulp, add in the eggs, baking powder, vanilla essence, matcha and oats, then stir until the mixture is fully combined. At this stage add in your choice of filling (if using) chocolate chips (white or dark) fresh fruit such as blueberries and raspberries work well too.
Next carefully spoon the mixture into the greased muffin tray. Bake for 8-10 minutes, remove from the oven and leave to cool on a wire rack. However, they are delicious eaten straight from the oven, but be careful as the middle will still be very hot especially if you have added fresh fruit.
Top tip: Experiment by adding dark chocolate chips, blueberries, raspberries, apple slices and raisins or nuts to the mixture before cooking to make a delicious sweet treat nobody will be able to resist. Happy baking.
